Fond Cyprès first wines have grown since 2004. They have worked very hard over the years to find their vineyard’s identity. They have gotten to know each plot, try different winemaking methods, and grape varieties. Building on successful discoveries, their wines are free and accomplished.

Club Pick 2

This Chilean natural red wine has juicy cherries, plump strawberries, and wild blackberry aromas. Vibrant acidity, earthy minerality, and a touch of peppery spice on the palate, and grippy tannins. The finish lingers with flavors of juicy fruit, and dusty earth. A perfect wine  adventurous palates, ideal with grilled meats or hearty stews.

Region: Maule Valley,

Carter Mollenhauer is a family winery operated by husband and wife team Edgard Carter and Karine Mollenhauer. They focus on producing small-batch wines using indigenous grape varieties. Their winemaking philosophy centers on organic farming and minimal intervention, aiming to highlight the purity and authenticity of Chilean wines. Their process involves manual labor, gravity-fed operations, and native fermentation techniques. The winery was established in 2014 after Edgard gained extensive experience in international winemaking regions such as California, Barossa, and Côtes du Rhône.

Rét Koppitsch, a natural wine from Austria's Burgenland, is a red blend boasting vibrant red fruit flavors, aromatic floral notes, balanced acidity, silky tannins, and a smooth, lingering finish.

Glou Glou

Region: Weinland, Austria

Alexander and Maria Koppitsch began making wine in Burgenland in 2011. They took over their parents 5.5-hectare winery and moved from selling their grapes into making their own wine. The vineyards are in the Neusiedl am See, a small village situated at the shores of the Neusidl Lake and on the eastern end of the Leitha Mountains which feature soft, rolling hills of mostly limestone soil. Like his father and grandfather before him, Alex does not believe in introducing any additives into the grapes or the wine. They use Rudolf Steiner’s biodynamic principles to cultivate their grapes, and pride themselves on performing every aspect of the vineyard management and the winemaking by hand, on a very small scale. - Jenny & Francois

Region: Stockholm, Sweden

Brutes Cider is the brainchild of five passionate individuals, each contributing unique expertise. Brad Sawicki, celebrated for his natural winemaking skills, adds an international touch. Tobias Eriksson, a Swedish cidermaker and sommelier, brings extensive fermentation knowledge and a commitment to tradition. Nicklas Ivarsson prioritizes sustainability and terroir-driven cider, emphasizing ecological integrity. Joakim Kviberg, a Swedish musician, infuses creativity with innovative flavors. Fredrik Winberg, a Swedish restaurateur, offers valuable insights into consumer preferences, ensuring Brutes Cider complements diverse dining experiences.

This white blend delivers bright citrus flavors of lemon and grapefruit, complemented by white peach and pear. The vibrant nose leads with citrus zest, followed by stone fruit nuances and a subtle minerality from the slate soils. It has delicate floral notes like acacia or honeysuckle, and whispers of white pepper. This natural white wine is lively and crisp on the palate, featuring a clean and refreshing citrus finish.

Region: Penedès, Spain

Cal Xurriu produces natural wines with a focus on organic and biodynamic farming practices. Their wines often feature indigenous grape varieties and are crafted with minimal intervention to highlight the terroir of the Penedès region. They are known for their crisp, refreshing white wines with vibrant citrus and floral notes.

It bursts with notes of pink grapefruit, underripe strawberries, cherries, and wild rose, and the finish will surprise you with a big hit of minerality and a lingering Hubba Bubba dust. It’s always golden hour with this Pink Gold sour.

Through meticulously prepared compost and the avoidance of chemical-synthetic substances, they nurture the vitality and equilibrium of their vines, yielding robust, dynamic wines that eloquently express their terroir. Harnessing the sun's luminance and warmth to enhance grape quality, and attuned to the moon's influence on vine growth and vitality, they meticulously align their vineyard practices with the lunar phases. - Minum Selections
