A Word From Our Founder

Hi friends,

February sits in a quiet middle space. The rush of the new year has softened, and there is a steady rhythm settling in. It is a month for cooking without a plan, opening bottles on instinct, and letting evenings unfold naturally. This is the sweet spot where curiosity meets comfort.

This month’s 12 bottle selection is meant to feel generous and wide open. A mix of reds, whites, and skin contact wines that move easily between moods and moments. There is brightness here for lighter meals, depth for heartier dishes, and plenty of bottles that invite a second glass without asking too much of you. Nothing feels rigid or overly serious. Everything feels alive and meant to be enjoyed.

These are wines for real life. For weeknights that turn into long conversations, for casual lunches that stretch into the afternoon, for dinners where everyone reaches for something different but everything still makes sense together. The range is intentional, offering contrast and discovery while still feeling cohesive and grounded.

As always, these bottles come from independent growers who work with care, patience, and a strong sense of place. Thank you for trusting us with such a broad and expressive lineup and for continuing to support wines that feel thoughtful, honest, and full of personality.

Here’s to a February filled with balance, curiosity, and plenty of good moments at the table.

Cheers,
Holly

Club Pick 1

A free-form red from Domaine la Bohème, blending multiple varieties into a loose, expressive Vin de France. Fruit is sourced from different sites and fermented naturally, letting each grape bring its own shape and energy to the mix. Juicy and open-knit, the wine favors flow and immediacy over structure, with an easygoing feel that stays grounded and food-friendly.

After a lifetime of experiences, Patrick Bouju settled in the Auvergne, releasing his first commercial vintage in 2002 and leaving his engineering job in 2008 to pursue winemaking full time.

Patrick's journey with wine began while he was a chemistry student in Clermont-Ferrand, where he discovered his aversion to classical wine due to his body's intolerance to sulfur. Inspired by low-intervention winemakers he met while in the military in Chalon-sur-Saône in 1994 and 1995, Patrick went on to study viticulture in Beaune.

After completing his studies, Patrick moved to the village of Glaine-Montaigut in the Auvergne, where he gradually started cultivating a small number of vines.

Club Pick 2

An old vine Bobal from organically farmed bush vines rooted in calcareous clay soils at high elevation in Utiel-Requena. Each parcel is harvested separately, destemmed, and fermented in concrete with extended skin contact before aging in a mix of concrete and used French oak. The élevage builds structure while preserving freshness, resulting in a wine that balances dark fruit, earth, and lively acidity with a firm but polished texture.

Region: Valencia, Spain

Utiel-Requena, situated in southeastern Spain, is not typically associated with classically structured wines of balance and nuance. This is largely due to the prevailing "quantity-over-quality" mentality that has historically affected Southern Spain, particularly with regards to the Bobal grape. With a staggering 90,000 hectares under vine, Bobal ranks as the third most planted grape variety in Spain. Historically, it was seen as suitable only for producing simple, acidic red and rosé wines destined for local cooperatives. However, in recent years, a select group of quality-minded growers has emerged, employing artisanal farming and vinification techniques to produce highly individual wines with true complexity.

Club Pick 3

A traditional, low alcohol field blend from the hills of Dolenjska, made from both red and white grapes. Farmed under integrated viticulture and fermented in stainless steel after a short maceration, it is bottled young to capture freshness and lift. Light, lively, and meant for everyday drinking, this is a bright, gently rustic wine with juicy fruit, soft texture, and refreshing acidity, best served with a slight chill.

Grilled sausages, roast chicken, lentil stew, sauerkraut dishes, mushroom soups, picnic foods

Region: Doljenska, Slovenia

Stepping into Slovenian wine country, you'll find the Zajc family, whose winemaking roots run deep, reaching back to the 19th century! Nestled in the Dolenjska region, famed for its light-bodied reds and crisp whites, they've become masters of a truly special wine - Cviček.

This isn't your average red or white. Cviček is Slovenia's national pride, a unique blend of red and white grapes safeguarded by law, much like Italy's prized Chianti. But unlike its bolder cousin, Cviček is a delightful, easy-drinking wine. Each sip is a burst of sunshine, overflowing with fresh berries and a touch of low-alcohol magic. It's a testament to the Zajc family's dedication to tradition and their passion for crafting wines that are as delicious as they are unique. So, if you're looking for something differ

Region: Galicia, Spain

Pedro Rodríguez, the driving force behind Adegas Guímaro, embodies a deep-rooted passion for winemaking in the rugged Ribeira Sacra region. Continuing a family legacy, they cultivate their steep, terraced vineyards using age-old methods passed down from previous generations. Embracing their rebellious spirit, reflected in the name "Guímaro," meaning rebel in Gallego, they champion nearly-forgotten local grapes like Caiño and Brancellao. Beyond preserving history, their focus is on adapting to climate change, crafting wines that are not only delicious but also echo the distinct character of Ribeira Sacra. In the cellar, they adhere to traditional techniques, employing wild yeasts, foot treading, and minimal intervention.

Club Pick 5

A lively liter bottle red from Las Mesas made from organically grown, biodynamically farmed grapes. Clovis CDR is crafted by Remi Pouizin, a biodynamic vintner based in Visan, the northernmost region of the Southern Rhône. This blend combines grapes from Pouizin's estate with those of three other organic producers, all situated within a 10km radius of the winery. These vineyard parcels span elevations between 200 and 350 meters." - T Edward

Club Pick 7

A fresh but textured expression of Sauvignon Blanc from marl-rich soils in Ritoznoj. Farmed without irrigation or herbicides, the grapes are hand harvested, with a small portion fermented on skins for added grip and structure. Spontaneous fermentation with native yeast and five months on fine lees in stainless steel builds depth while preserving brightness. The result is energetic and mineral, balancing vivid fruit with a lightly savory edge and bright acidity.

Nestled in Ritoznoj, Štajerska, Dorcha embodies Izidor (Dorcha) Vehovar's innovative spirit as the third generation in his family's winemaking legacy. Embracing a fresh perspective, he charts a new, more approachable course. Eschewing conventional norms, Izidor follows the local tradition of crafting pure, vibrant wines. Inspired by insights from his neighbor Nick Gee of Heaps Good Wine Co., he infuses his family's tradition with modern flair, creating captivating wines naturally. Massimo Marchiori and Antonella Gerosa, an Italian couple hailing from Piedmont, have embarked on a remarkable winemaking journey in Massís de Bonastre, nestled in the Baix Penedés region. Their mission? To revive neglected old vines and lesser-known grape varietals, transforming them into treasures of extreme quality and concentration. Embracing organic farming practices, they cultivate their plots with care, yielding grapes of exceptional character. In the cellar, they practice the art of minimal intervention winemaking, allowing native yeasts to guide fermentation and refraining from adding any additives, fining, or filtration, eschewing even the addition of SO2.

Middle of the Road

Region: Loire, France

Vignobles Berthier is run by brothers Clément Berthier and Florian Berthier, fifth generation growers working in the heart of the central Loire. Their vineyards span Sancerre and Coteaux du Giennois, with additional fruit sourced from trusted friends in nearby appellations.

While Sauvignon Blanc makes up most of their plantings, the Berthier philosophy is not about varietal expression but about place. They focus on late harvesting and long lees aging to let soil and site take the lead over grape character. The vineyards have been farmed organically since 2013, with certification achieved in 2022, reduced tillage, and a strong emphasis on soil health.
