An old vine Bobal from organically farmed bush vines rooted in calcareous clay soils at high elevation in Utiel-Requena. Each parcel is harvested separately, destemmed, and fermented in concrete with extended skin contact before aging in a mix of concrete and used French oak. The élevage builds structure while preserving freshness, resulting in a wine that balances dark fruit, earth, and lively acidity with a firm but polished texture.

This is largely due to the prevailing "quantity-over-quality" mentality that has historically affected Southern Spain, particularly with regards to the Bobal grape. With a staggering 90,000 hectares under vine, Bobal ranks as the third most planted grape variety in Spain. Historically, it was seen as suitable only for producing simple, acidic red and rosé wines destined for local cooperatives. However, in recent years, a select group of quality-minded growers has emerged, employing artisanal farming and vinification techniques to produce highly individual wines with true complexity.
