Crafted by winemaker Kosie Van Der Merwe, this Cabernet Franc from Elgin showcases the region's cool nights and moderate days, perfect for slow ripening. The grapes were harvested in two batches, ensuring optimal ripeness. The wine was made using 40% whole bunch clusters and 60% destemmed grapes, with natural fermentation lasting three weeks. After fermentation, the wine was basket-pressed and aged in 400L and 300L barrels. Fun Fact: Cabernet Franc is known for its versatility and distinctive green pepper notes. In the cooler climate of Elgin, this grape develops a unique balance of ripe fruit flavors and fresh herbal characteristics, making it a favorite among wine enthusiasts for its complexity and food-friendly profile.

Matthieu Barret found his affinity for organic viticulture and living ecosystems in Beaune. From his first vintage in 2000, he focused on vineyard work, embracing organic practices. Not satisfied with the results, he made a significant change in 2006, opting for concrete eggs over barrels for vinification. This pursuit of purity and expression continues to guide his winemaking.

In 2012, Matthieu abandoned machines in favor of mules, horses, and manual labor in Cornas. He also introduced 'green spaces' around the farm, creating watering holes to nurture a diverse ecosystem of vines, forest, meadows, and woodlands.

According to Matthieu, a wild environment makes plants happier than a vineyard-only desert.

At 33 years old, my journey into the world of wine began with a university course focused on the Sébastien Brunet estate, renowned for its organic practices in the AOC Vouvray, spanning from 2006 to 2008. It was during this time that I crossed paths with Mathieu Cosme, another advocate of organic viticulture. In 2013, seizing the opportunity, I joined forces with Mathieu to embark on a new winemaking venture at Domaine "Le Facteur". Over the years, I've reclaimed ownership of vineyards in the AOC Vouvray and expanded our footprint with 2 hectares adjacent to the AOC Côteau du Loir. Committed to organic principles, our cuvées are either certified or undergoing certification, with a steadfast aim of achieving 100% certification within the next three years. - Domaine Le Facteur
