Crafted by winemaker Kosie Van Der Merwe, this Cabernet Franc from Elgin showcases the region's cool nights and moderate days, perfect for slow ripening. The grapes were harvested in two batches, ensuring optimal ripeness. The wine was made using 40% whole bunch clusters and 60% destemmed grapes, with natural fermentation lasting three weeks. After fermentation, the wine was basket-pressed and aged in 400L and 300L barrels. Fun Fact: Cabernet Franc is known for its versatility and distinctive green pepper notes.
