Club Pick 3

Kompot 2021 is a light, easy-drinking red wine made from a blend of Zweigeltrebe, Dornfelder, and Blauer Portugieser grapes. The grapes are grown in vineyards with loess subsoil, topped with varying levels of sand and humus, and planted in the 1990s with a south/southwest exposure. Half of the grapes are pressed immediately as whole bunches (blanc de noir style), while the other half undergoes fermentation in open tanks with maceration on the skins for 3-4 weeks. After fermentation, the wine is aged for 12 months in older French oak barrels. The final blend is unfined, unfiltered, and made without added sulfur, resulting in a fresh, vibrant red that can be enjoyed cool or at room temperature.
Fun Fact: The name "Kompot" is inspired by a traditional Eastern European fruit compote, reflecting the wine's light, fruity character and its easy, refreshing nature—perfect for casual sipping on any occasion.

Sourced from a parcel in the renowned Grille-Midi vineyard, known for its 50-year-old vines planted on pink granite soil. The grapes are organically farmed by Thibault himself and are hand-harvested before undergoing traditional whole-bunch carbonic maceration. This is followed by spontaneous fermentation and 8 months of aging on fine lees in old barriques. With no fining, no filtration, and only a minimal addition of sulfur at bottling, this wine showcases the pure expression of the terroir. Club Pick 7

Decadence has never been so drinkable! A fascinating Jura blend of Savagnin, which spends some time under “flor” (i.e., a layer of yeast that forms over the top of some wines and brings out intriguing flavors), and Chardonnay that’s done in a more Burgundian style (in Jura you would say it's "ouillé"). The resulting wine highlights the strengths of each component, while forming something totally singular. This bottle is rich, nutty, spiced like curry… yet also bright, fresh, with a spine of minerality. Drink while eating like a 19th-century French aristocrat: sweetbreads, liver paté, duck breast. Also sublime alongside virtually any cheese.
