The wine undergoes a short one-night maceration, allowing for a spontaneous fermentation with just a hint of skin contact. Aged for 5 months on its lees in stainless steel tanks, this wine captures the essence of the Terrasses du Larzac region with its fresh, herbal notes and bright fruit flavors, showcasing a unique mountain twist on classic Grenache.
Fun Fact: The name "Una Notte," meaning "one night" in Italian, nods to the brief maceration time the Grenache Noir grapes undergo, as well as winemaker Konrad Pixner's Italian heritage. This short maceration imparts a delicate color and a lively freshness to the wine, making it a distinctive take on Grenache.
