Georg Schmelzer, a fourth-generation vintner hailing from the Gols region near Lake Neusiedl in Austria, embodies a deep commitment to winemaking rooted in Demeter principles. His approach encompasses techniques like horn manure, ground crystal applications, and herbal infusions, such as horsetail, all geared towards enhancing soil vitality and fortifying vine vigor and metabolism. Hand-harvested grapes undergo aging in neutral oak, eschewing filtration, fining, or any addition of sulfur.
