Nestled beneath a picturesque castle, Helmut and Hedwig Dolde cultivate Silvaner, Pinots (Noir and Blanc), Riesling, and a few other varietals with meticulous care in the captivating terroirs of Weiße Jura, volcanic soils around Linsenhofen and Neuffen, and Braune Jura near Metzingen. Despite their small domaine, they craft remarkable ciders from apples and black pears, along with impeccably pure wild fruit distillates. Their wines, reminiscent of the Sound of Music rather than the Swabian Jura, embody the essence of "mountain wines," pristine as alpine streams, continually enticing us back for more with their invigorating freshness.
