A Word From Our Founder

June’s 6-Bottle Club is all about versatility. This month’s selection brings together a thoughtful mix of styles, from vibrant reds and textured skin-contact wines to refreshing whites and lively sparkling bottles.

Spanning Spain, France, Italy, Chile, and Austria, the lineup reflects the diversity that makes wine so exciting to explore. Each bottle offers a different perspective while sharing a common thread of energy, balance, and a strong sense of place.

There’s a little something for every occasion this month. Some wines are perfect for warm afternoons and easy aperitifs, while others are built for dinner tables, outdoor gatherings, and meals shared with family and friends. A few may even surprise you with how much they evolve as they open in the glass.

June is a month that invites flexibility, and these wines are meant to do the same. Don’t be afraid to experiment with serving temperatures, pairings, or opening a bottle simply because the moment feels right.

As always, we’ve focused on producers who farm thoughtfully and work with a lighter touch in the cellar, allowing each wine to express its character honestly and naturally.

Club Pick 1

A co-fermented field blend from organically farmed old vines in the hills surrounding Hervicedo in Bierzo. Red and white varieties are interplanted throughout the vineyards, reflecting the region's traditional farming practices. The grapes are hand harvested, partially destemmed, and fermented before aging in concrete. Fresh, energetic, and mineral driven, it captures the vibrant character of Bierzo's mountain vineyards.

Region: Castilla y Leon, Spain

In his winemaking approach, Diego prioritizes minimal intervention to preserve the vitality and essence of the vineyards. He opts for a combination of unlined concrete vats and aged oak and chestnut casks, believing these materials allow the wine to breathe, unlike stainless steel which he perceives as stifling the wine's natural character. Eschewing pumps, additives, and sulfur dioxide additions since the 2016 vintage in his recently constructed bodega, Diego critiques enological products as components of a capitalist system. Drawing parallels to his past as a musician, he sees winemaking as a form of creative expression. Diego's philosophy is encapsulated in his belief that many in natural winemaking merely mimic without truly connecting with their vineyards. Clearly, Diego stands apart

Club Pick 2

A crunchy, vibrant Cabernet Franc sourced from certified organic vineyards in neighboring Bourgueil, the sister appellation to Domaine du Mortier's home base of Saint Nicolas de Bourgueil. Grown on sedimentary soils rich in flint and limestone, the grapes undergo a three-week semi-carbonic maceration before aging for 10 months in large oak vats. Bottled unfined, unfiltered, and without added sulfur, Pollux is an easygoing but layered expression of Loire Cabernet Franc with freshness, texture, and classic peppery lift.

Region: Loire Valley,

Call it driven by passion: Cyril and Fabien, the two brothers at the helm of Domaine du Mortier, aren’t originally from a winemaking family. But, when their parents bought a house with a small vineyard back in 1989, the then-teenagers fell in love with viticulture. So much so that they started a proper domain seven years later, naming it after a hamlet where the winery and vineyards are located, just west of the town of Bourgueil. - Jenny & Francois

Club Pick 4

A skin contact Semillon from a tiny 0.3 hectare parcel of own rooted vines in Coelemu, near Chile's Pacific coast. The 40 plus year old vines grow on granitic soils and are harvested by hand before fermenting on their skins in stainless steel without temperature control. After fermentation, the wine rests for six months in stainless steel before bottling with minimal sulfur and without fining or filtration. Fresh and textured, it offers a focused expression of coastal Itata terroir.

Region: Itata Valley, Chile

Nacho, also known as Ignacio Pino Román, breaks the mold of your typical winemaker. In Chile's Itata Valley, he's on a mission to revive age-old traditions. Instead of relying on modern equipment and chemical shortcuts, Nacho champions the old ways. He roams Coelemu, collaborating with small growers who tend to their ancient vines naturally, without harsh chemicals. In his cellar, simplicity reigns supreme - stainless steel, clay, and neutral wood are the tools of his trade. With no unnecessary additives, Nacho's focus is on allowing the unique character of the Itata Valley and its grapes to shine through in every bottle of his "natural wine." It's a recipe for something truly special, don't you think?

Club Pick 5

A lively pétillant naturel made from Pinot Gris grown on unpruned vines in Burgenland. Farmed biodynamically, the grapes are fermented with native yeasts and bottled before fermentation is complete to naturally capture its fine bubbles. Bright, textured, and energetic, it balances orchard fruit with refreshing acidity and a savory mineral edge.

Region: Burgenland, Austria

Meinklang is a lively farm compromising the three typical fields of a Pannonian farmstead in East Austria south of capital town Vienna: wine-growing, fruits and agriculture. Each family-member is specialized in an aspect of farming. Unique is the estate owns Angus & Aubrac cattle herd. It`s the farms source for our own nutritious, organic fertilizer for lively soils in the vineyards and creates the closed circle in the biodynamic Demeter farming. Outstanding issues are the totally unpruned vines, called «graupert» and the extended maturation in concrete egg-shaped containers. As well as the family initiated the first holistic Demeter brewery where we refine the ancient grain beer out of the old varieties called Einkorn and Emmer wheat. - From Zev Rovine

Club Pick 6

A vibrant field blend from Neuberg, a rocky limestone hillside in Burgenland that brings together many of the grapes grown on the Koppitsch estate. Welschriesling undergoes skin maceration while Rosenmuskateller is made with semi carbonic fermentation before being blended with small portions of the estate's red and white wines. Bottled unfined, unfiltered, and without added sulfur, it is fresh, aromatic, and full of energy.

Region: Weinland, Austria

Alexander and Maria Koppitsch began making wine in Burgenland in 2011. They took over their parents 5.5-hectare winery and moved from selling their grapes into making their own wine. The vineyards are in the Neusiedl am See, a small village situated at the shores of the Neusidl Lake and on the eastern end of the Leitha Mountains which feature soft, rolling hills of mostly limestone soil. Like his father and grandfather before him, Alex does not believe in introducing any additives into the grapes or the wine. They use Rudolf Steiner’s biodynamic principles to cultivate their grapes, and pride themselves on performing every aspect of the vineyard management and the winemaking by hand, on a very small scale. - Jenny & Francois
