Fabien Jouves hails from a lineage deeply rooted in grape farming in Cahors, spanning six generations. Situated in Causses, renowned for its limestone plateaus, his domaine graces the highest slopes of the Cahors appellation. Nestled atop the Quercy hills, his family's 22 hectares stand at over 1,100 feet, benefiting from cool nighttime temperatures that impart freshness to the wines. Expanding beyond his family's holdings, Fabien acquired two additional parcels, amassing over 30 hectares in total.

Transitioning from a prospective medical career, Fabien assumed the role of vigneron in 2006, spurred by his family's struggle to sustain the domaine. Opting to preserve his familial legacy, he enrolled at the esteemed École du Vin de Bordeaux.

"Owned by the Suriol family, Cellers de Can Suriol del Castell is known for making wines and vintage Cava with personality in the organic winemaking tradition. They make wines under the Suriol brand which are all estate bottled fruit and then they make the Azimut line from purchased grapes from their neighbors, all of whom work organically. The Can Suriol vineyards and winery are situated in Alt Penedes, Province of Barcelona, Catalunya. This region is justifiably famous for producing fine wines and cava. The cultivation of the Can Suriol vineyards is done by 100% organic methods as certified by the CCPAE (until 2007 NOP certification).

Club Pick 4

Thanks to its naturally grey-tinted skins, Pinot Gris is a standout candidate for orange wine—and Oxymore proves why. Ten days of skin maceration followed by eight months of aging in stainless steel tanks creates depth, texture and an aromatic complexity that is balanced by the lift of a striking acidity. Complex, yet vibrant. Weighted, but light.

Roasted cauliflower steaks, Thai coconut curry with rice, or trout with citrus

Dry with gentle tannins, among notes of orange peel, candied citrus, saline, ginger, and rose petals. Surprisingly weighted for minimal skin maceration, with a refreshing acidity that keeps things light

Everything is hand-harvested, zero shortcuts, and obsessively thoughtful. They’re big on organic, light on dogma. Sulfur? Only if the wine asks nicely. The vibe in the cellar is: let the grapes do their thing. Whether they’re working with local fruit or branching out into Beaujolais or Alsace, Guilhem and Rémi stay grounded in one mission — make honest, expressive wines that speak louder than they pour.

Their Domaine bottlings are ultra-serious, Jura to the core, made with reverence and depth. Their négociant wines? Total creative playgrounds — bright, fun, a little wild, and incredibly drinkable. Somehow, it all works. And it all works beautifully.
