Srem

Srem, situated in the northern part of Serbia, is emerging as an exciting region for natural winemaking. With its fertile plains, moderate continental climate, and rich winemaking heritage, Srem offers an ideal environment for sustainable viticulture. Natural winemakers in the region prioritize organic and biodynamic farming methods, cultivating indigenous grape varieties such as Smederevka, Tamjanika, and Prokupac with minimal intervention. By eschewing chemical additives and focusing on natural fermentation, they produce wines that reflect the region's unique terroir and the purity of the fruit. Srem's natural wines are known for their freshness, vibrancy, and expression of fruit flavors, with Smederevka offering crisp acidity and citrus notes, Tamjanika providing floral aromatics and spice, and Prokupac showcasing rich red berry flavors and smooth tannins. As the demand for authentic and terroir-driven wines continues to grow, Srem stands as a promising destination in the natural wine movement, offering a taste of Serbia's winemaking tradition and commitment to sustainability with every bottle.

Bikicki

In the realm of winemaking, Djordje Bikicki's journey is intertwined with a profound appreciation for natural wines, sparked by his encounter with the renowned Oszkar Maurer. Following a fortuitous placement next to Maurer at a Serbian wine fair in 2013, Djordje found himself immersed in a world of shared ideas and mutual inspiration. Since then, Maurer has served as the consulting winemaker for Bikicki, guiding him in crafting minimal intervention wines fermented exclusively with native yeasts and featuring minimal sulfur additions before bottling. With a focus on expressing the pure essence of Serbian fruit sourced from the natural terroir of Fruška Gora, Bikicki's winemaking philosophy revolves around achieving balance, elegance, and clarity.
