A Word From Our Founder

Hi friends,

May in the 6-Bottle Club brings a generous lineup with range, color, and plenty of energy. This month’s selection moves across reds, white, orange, and sparkling rosé, creating a set that feels lively, versatile, and well suited to the season.

The wines offer a broad mix of expressions. There are reds with freshness, fruit, and gentle structure, a white that brings brightness and clarity, an orange wine with texture and aromatic depth, and a sparkling rosé that adds lift and movement. Together, they create a club month that feels balanced, dynamic, and easy to enjoy in different moments.

These bottles are built for the table. Some are perfect slightly chilled before dinner, others can carry through a meal, and a few invite a slower pour as they open and shift in the glass. The variety makes this selection especially flexible, whether you are sharing with friends, cooking something simple, or opening a bottle just because the evening calls for it.

As always, the focus is on wines made with care, from producers who value thoughtful farming, honest expression, and a lighter touch in the cellar. The result is a group of wines that feels vibrant, expressive, and connected to the people and places behind them.

Thank you for being part of the club and for continuing to explore these wines with us.

Here’s to a May filled with colorful bottles, lively pours, and shared tables.

Cheers,
Holly

Club Pick 1

A fresh organic red from Languedoc, made with Grenache and Carignan grown on limestone-based soils near Nizas. The grapes are harvested by variety and parcel, destemmed, then macerated as whole berries in stainless steel, concrete, and large neutral barrels. After a short fermentation and brief aging, the wine is blended and lightly filtered before bottling. Bright, easygoing, and fruit-driven, with red fruit, soft tannins, and a clean earthy finish.

Grilled chicken, burgers, ratatouille, lentil salad, charcuterie, roasted vegetables

Red cherry, raspberry, plum, wild herbs, earth, limestone minerality, soft tannins

With 15 hectares of organically farmed vineyards (yes, that’s right — zero shortcuts, just sunshine, soil, and a lot of care), they bottle up the purest expression of the Languedoc spirit. This isn’t just a family-run estate — it’s a full-blown labor of love, turning out around 250,000 bottles a year, split between their Domaine line (the heart and soul) and their négociant wines (their creative, free-spirited side hustle).

What you’ll taste? Sunshine. Effort. Joy. Maybe even a little rebellion. These wines are for people who like their stories real, their land respected, and their glasses never empty.

From our friends in Nizas, with love — and a lot of really, really good wine.

Club Pick 2

An organic red from Roussillon made with Grenache Noir and Mourvèdre grown on clay and stone soils. The fruit is hand-harvested and co-fermented with native yeasts in stainless steel, with whole-bunch Mourvèdre layered under destemmed Grenache. After a short maceration, the wine finishes fermentation in tank and rests for 6 months on fine lees in stainless steel and fiberglass. Bottled unfined and unfiltered with low sulfur, it is juicy, earthy, and fresh, with soft structure and a stony finish.

Grilled sausages, roast chicken, lamb kebabs, ratatouille, lentils, mushroom tartine

Club Pick 3

A light bodied, carbonic Gamay that marries natural winemaking with precision. Libre Pensée—“free thought”—reflects the spontaneous, thoughtful philosophy behind this cuvée, as seen through notes of silky, vibrant red fruits, crushed violets, and a hint of pink peppercorn

Fried chicken with a gochujang glaze, falafel with yogurt, and mushroom tacos with citrus and crema

Cranberry, strawberry, crushed violets, savory herbs and pink peppercorn. Overall light, in terms of body, tannins, and alcohol, with a lifted acidity and clean, zippy finish

Clotaire Michal has wine in his veins. From his early days swirling glasses as a sommelier in top spots across France and the UK, to a five-year deep-dive under legendary winemakers like Christophe Peyrus and the iconic Thierry Allemand in the Rhône, Clotaire didn’t just learn winemaking — he lived it. In 2013, he and his wife Yuka (who officially joined the Domaine in 2018) took a leap of faith and built something rare: a soulful, old-vine haven in Saint-Étienne-la-Varenne, where pink granite and 100-year-old Gamay vines tell a story you can taste in every glass. No chemicals, no shortcuts, no trendy “glouglou” vibes here.

Club Pick 4

A layered white blend from Bairrada made with native Portuguese varieties grown across clay-calcareous and sandy soils. The vineyards are farmed with environmentally conscious practices and harvested by hand at optimal ripeness. After gentle pressing, the wine ferments in stainless steel before aging on lees and undergoing malolactic fermentation in French oak barrels. Fresh acidity, textured fruit, and subtle creaminess make this a versatile and food-friendly white.

Grilled white fish, roast chicken, vegetable risotto, shellfish, soft cheeses, rice dishes

Citrus peel, pear, white flowers, orchard fruit, toasted almond, saline minerality, soft spice

A zesty orange wine made from Marina, Muscat, and Xarel·lo, with each variety vinified separately in stainless steel. Marina and Muscat spend 30 days on skins before pressing, then the wine ages for 6 months in stainless steel. Unfiltered and made with no added sulfur, it’s vibrant and aromatic, with stone fruit, pear, jasmine, spice, and a lightly grippy finish.

Raïmones represents the vibrant culmination of three esteemed wine families' legacies in Catalunia, heralding a new era of winemaking with a focus on natural practices and the revitalization of forgotten varietals. Embodying a commitment to craftsmanship and sustainability, Raïmones emerges as a beacon of innovation within the region's wine landscape. At the heart of their mission lies the preservation and promotion of "the Marina," an ancient and enigmatic grape variety whose potential has long been overshadowed by more mainstream cultivars. With a blend of reverence for tradition and a bold vision for the future, Raïmones harnesses the collective expertise and passion of its founders to breathe new life into Catalonia's winemaking heritage.

Tiago Sampaio, the innovative young winemaker behind Folias de Baco, began his journey in 2007, though his passion for winemaking traces back to his childhood, where he explored his family's farms and vineyards alongside his grandfather. Always curious and adventurous, Tiago's willingness to experiment shaped his path. He pursued agricultural studies in Santo Tirso and spent five years at university in Vila Real before embarking on a PhD in Viticulture and Enology in Oregon. There, he absorbed modern winemaking philosophies and aesthetics, all while cherishing his Douro roots. Returning to the Alto Douro, specifically in the challenging sub-region of Cima-Corgo, Tiago established his estate. His vines cling to steep slopes of schist and granite, ranging from 500 to 700 meters in altitude.
