A Word From Our Founder

Hi everyone,

June’s 3-Bottle Club may be smaller in size, but it offers a beautifully balanced journey across three distinct styles and regions.

This month’s selection takes us from the Loire Valley in France to Chile’s Itata Valley and Austria’s Burgenland, highlighting producers who share a thoughtful approach to farming and a commitment to letting their wines speak for themselves.

Together, these bottles create a collection that feels fresh, expressive, and perfectly suited for the season ahead. Expect a mix of bright fruit, texture, and energy, with each wine offering its own personality while complementing the others in surprising ways.

This is a lineup designed for flexibility. Open a bottle for a casual weeknight dinner, bring one along to a gathering with friends, or spend a little extra time exploring how each wine evolves in the glass.

As always, we’ve selected wines that feel alive and authentic, made by producers who prioritize place over polish and embrace a lighter touch in the cellar.

Club Pick 1

A crunchy, vibrant Cabernet Franc sourced from certified organic vineyards in neighboring Bourgueil, the sister appellation to Domaine du Mortier's home base of Saint Nicolas de Bourgueil. Grown on sedimentary soils rich in flint and limestone, the grapes undergo a three-week semi-carbonic maceration before aging for 10 months in large oak vats. Bottled unfined, unfiltered, and without added sulfur, Pollux is an easygoing but layered expression of Loire Cabernet Franc with freshness, texture, and classic peppery lift.

Region: Loire Valley, France

Call it driven by passion: Cyril and Fabien, the two brothers at the helm of Domaine du Mortier, aren’t originally from a winemaking family. But, when their parents bought a house with a small vineyard back in 1989, the then-teenagers fell in love with viticulture. So much so that they started a proper domain seven years later, naming it after a hamlet where the winery and vineyards are located, just west of the town of Bourgueil. - Jenny & Francois

Club Pick 2

A skin contact Semillon from a tiny 0.3 hectare parcel of own rooted vines in Coelemu, near Chile's Pacific coast. The 40 plus year old vines grow on granitic soils and are harvested by hand before fermenting on their skins in stainless steel without temperature control. After fermentation, the wine rests for six months in stainless steel before bottling with minimal sulfur and without fining or filtration. Fresh and textured, it offers a focused expression of coastal Itata terroir.

Region: Itata Valley, Chile

Nacho, also known as Ignacio Pino Román, breaks the mold of your typical winemaker. In Chile's Itata Valley, he's on a mission to revive age-old traditions. Instead of relying on modern equipment and chemical shortcuts, Nacho champions the old ways. He roams Coelemu, collaborating with small growers who tend to their ancient vines naturally, without harsh chemicals. In his cellar, simplicity reigns supreme - stainless steel, clay, and neutral wood are the tools of his trade. With no unnecessary additives, Nacho's focus is on allowing the unique character of the Itata Valley and its grapes to shine through in every bottle of his "natural wine." It's a recipe for something truly special, don't you think?

Club Pick 3

A vibrant field blend from Neuberg, a rocky limestone hillside in Burgenland that brings together many of the grapes grown on the Koppitsch estate. Welschriesling undergoes skin maceration while Rosenmuskateller is made with semi carbonic fermentation before being blended with small portions of the estate's red and white wines. Bottled unfined, unfiltered, and without added sulfur, it is fresh, aromatic, and full of energy.

Region: Weinland, Austria

Alexander and Maria Koppitsch began making wine in Burgenland in 2011. They took over their parents 5.5-hectare winery and moved from selling their grapes into making their own wine. The vineyards are in the Neusiedl am See, a small village situated at the shores of the Neusidl Lake and on the eastern end of the Leitha Mountains which feature soft, rolling hills of mostly limestone soil. Like his father and grandfather before him, Alex does not believe in introducing any additives into the grapes or the wine. They use Rudolf Steiner’s biodynamic principles to cultivate their grapes, and pride themselves on performing every aspect of the vineyard management and the winemaking by hand, on a very small scale. - Jenny & Francois
