Xavier's journey into winemaking began unexpectedly when he found himself managing a wine bar in London, UK, at the young age of 18. Upon returning to Australia, he delved into the study of winemaking, embarking on frequent travels to deepen his understanding of viticulture and oenology. His hands-on experience began as an assistant winemaker at Bress in Harcourt, Victoria, where he honed his skills in biodynamic farming and agriculture. In 2016, Xavier introduced his inaugural wines to the Australian market. Exhibiting a remarkable depth and intricacy, Xavier's wines reflect his thoughtful approach, yet remain refreshingly pure in character.
