A true experiment in fermentation and vineyard spontaneity, ‘Project Wine’ is the result of last-minute fruit pickups and creative cellar decisions. In 2021, Dave & Koen focused solely on Red Sémillon — a rarity in its own right — and ran wild with three distinct fermentations: stainless steel, ceramic egg, and an extended 210-day skin maceration. The result is a wine with unexpected depth, a textured mid-palate, and a bit of rebellious charm. As the team says, they wish they made more.
