A clarete made from three traditional Criolla varieties grown in 60-year-old pergola vineyards in the Uco Valley. The grapes are spontaneously fermented in concrete vats and old oak barrels, with 20% of the batches receiving two weeks of skin contact. The wine ages for three months on the lees before blending and bottling with coarse filtration and a small addition of sulfur.

About Paso Uno

Paso is a low-intervention wine project founded by childhood friends Norberto Páez and Sebastián Bisole. The project began in the Experimental Winery of the Universidad de Cuyo in 2007–2008, where the two studied winemaking and began producing small batches of Malbec and Bonarda. They launched Paso in 2016, working with traditional Argentine varieties and focusing particularly on the revival of Criolla grapes in Mendoza. Their wines are made in stainless steel and concrete, with oak avoided to preserve varietal character and a sense of place.
