A traditional method sparkling wine made from organically farmed Chardonnay grown on limestone soils in southern Bugey. Hand harvested and whole-bunch pressed, the wine ferments spontaneously with indigenous yeasts and completes alcoholic and malolactic fermentation in used French oak. The base wine ages for 12 months in barrel, followed by a secondary fermentation in bottle and 18 months sur latte. Disgorged with no dosage added.

About Domaine Bartschi

Domaine Bärtschi is based in Cheignieu-la-Balme in Bugey, in the southern extension of France’s limestone-rich Jura mountains. Clément Bärtschi farms 3 hectares in the Manicle cru, planted to old-vine Chardonnay, massale-selection Pinot Noir, and Gamay. The estate is certified organic, with biodynamic practices also incorporated into the vineyards.

Bärtschi’s wines are made with hand-harvested grapes and indigenous yeasts. Whites are whole-cluster pressed, fermented, and aged in 228L French oak barrels, with 5–10% new oak. Reds undergo two weeks of whole-cluster maceration with gentle pump-overs before aging in neutral 228L French oak barrels.
