From the middle section of the south-facing Cru Manicle, where deeper soils contain a higher proportion of clay among the vineyard's gravelly limestone. The organically farmed, hand-harvested Chardonnay is whole-bunch pressed and fermented spontaneously with indigenous yeasts in neutral French oak. A high proportion of solids is retained during fermentation, followed by full malolactic fermentation and 11 months of aging in barrel. The wine spends an additional two months in stainless steel before bottling without fining or filtration.

About Domaine Bartschi

Domaine Bärtschi is based in Cheignieu-la-Balme in Bugey, in the southern extension of France’s limestone-rich Jura mountains. Clément Bärtschi farms 3 hectares in the Manicle cru, planted to old-vine Chardonnay, massale-selection Pinot Noir, and Gamay. The estate is certified organic, with biodynamic practices also incorporated into the vineyards.

Bärtschi’s wines are made with hand-harvested grapes and indigenous yeasts. Whites are whole-cluster pressed, fermented, and aged in 228L French oak barrels, with 5–10% new oak. Reds undergo two weeks of whole-cluster maceration with gentle pump-overs before aging in neutral 228L French oak barrels.
