Made from an organically farmed single vineyard called El Cemetario, planted 80 to 95 years ago on clay-calcareous soils with quartz, slate, and iron. The vines sit at 550 to 600 meters in the hills surrounding Hervededo. Hand-harvested grapes are destemmed and spend 30 days macerating and fermenting in used chestnut barrels before aging on fine lees for 24 months in used Slavonian oak barriques. Bottled unfined, unfiltered, with only a small addition of sulfur, this is a textured, deeply expressive white shaped by old vines and careful, low-intervention winemaking.

Ripe orchard fruit, dried citrus peel, chamomile, herbs, wet stone, subtle spice, savory texture, long mineral finish

Bodega La Senda Winemaker

The Producer

About Bodega La Senda

In his winemaking approach, Diego prioritizes minimal intervention to preserve the vitality and essence of the vineyards. He opts for a combination of unlined concrete vats and aged oak and chestnut casks, believing these materials allow the wine to breathe, unlike stainless steel which he perceives as stifling the wine's natural character. Eschewing pumps, additives, and sulfur dioxide additions since the 2016 vintage in his recently constructed bodega, Diego critiques enological products as components of a capitalist system. Drawing parallels to his past as a musician, he sees winemaking as a form of creative expression. Diego's philosophy is encapsulated in his belief that many in natural winemaking merely mimic without truly connecting with their vineyards. Clearly, Diego stands apart
