A bottle-fermented sparkling wine from old vines planted in the 1950s in the hills around Combai. Grown on chalky soils, the grapes ferment spontaneously with a short 10-day skin maceration in stainless steel before aging in the same vessels. Bottled unfiltered with fresh must from dried Glera and Bianchetta Trevigiana for a natural secondary fermentation, this col fondo wine is bright, textured, and full of energy.

Wildflowers, hawthorn, acacia, orchard fruit, medicinal herbs, green cardamom, ginger, fine bubbles, chalky minerality, delicate astringency

About Costadilà

Ernesto Cattel initiated the Costadilà project in 2006, alongside Mauro Lorenzon and Leonello. Within a year, they crafted their inaugural wine. Their vineyards adhere to organic farming practices, while their winemaking process involves fermentation with native yeasts and abstains from the use of sulfur.

About the Region

Veneto, Italy

From the rolling hills of Valpolicella to the sun-kissed vineyards of Soave, Veneto's winemakers are redefining tradition by embracing organic and biodynamic principles in their viticulture practices. With a deep reverence for the land and a commitment to minimal intervention, these artisans coax out the true essence of the indigenous grape varieties, resulting in wines that pulsate with vitality and character.
