Nerello Mascellese: Produced on the high-altitude slopes of Mount Etna, Nerello Mascalese 2019 by Elisa Trovato reflects the deep relationship between the volcanic terroir and winemaking traditions. Hand-harvested from 3 hectares of volcanic soils, the grapes undergo 15-day maceration and fermentation with indigenous yeasts. The wine is aged for 12 months in used Slovanian oak barrels, followed by 12 months in the bottle, resulting in a complex, elegant red with the distinct character of its unique environment.
Fleurie Grille-Midi:
Sourced from a parcel in the renowned Grille-Midi vineyard, known for its 50-year-old vines planted on pink granite soil. The grapes are organically farmed by Thibault himself and are hand-harvested before undergoing traditional whole-bunch carbonic maceration. This is followed by spontaneous fermentation and 8 months of aging on fine lees in old barriques. With no fining, no filtration, and only a minimal addition of sulfur at bottling, this wine showcases the pure expression of the terroir. It’s floral, fresh, and fascinating, with a well-built palate and a vivid, succulent finish.

Nakt Silavner: Fun Fact: Odinstal's '[Nakt]' Silvaner comes from a unique monopole vineyard at 350 meters altitude, making it one of the highest in the Pfalz region. The vineyard's keuper soil, a type of prehistoric limestone, contributes to the wine's distinctive mineral character and its ability to express the essence of the land.

About Natural Wine
Great question! There are a lot of definitions for natural wine with the main term you'll hear being that it has had minimal intervention. To be more specific, our definition is that the wine must first be sustainably farmed, which typically means it was organically or biodynamically farmed.
Then, in the cellar the natural winemaking process has some differences as well! The wine is typically unfined, unfiltered, and goes through spontaneous fermentation with native yeasts. If you want to know more about what natural wine is, we have an entire guide under our reference section!
The short answer is that natural wine can taste like any other kind of conventional wine (we like to call these stealth natural wines) or it can taste quite a bit different, as production methods can vary and potentially be lighter, or in a style you've never had before (like orange, pet-nat or amphora).
The natural wine community is also more accepting of some qualities in wines that conventional would consider a flaw, like Brett, some oxidation, or volatile acidity. We would consider these in high amounts to also be a flaw, but in many cases a touch of these qualities can ultimately improve their flavor and texture and be happily accepted in a natural wine.
