Hand-harvested and spontaneously fermented in neutral barrels, it rests on its lees for 11 months, gaining complexity and texture. With no fining, no filtration, and minimal sulfur, this sparkling wine is fresh, with bright citrus, green apple, and floral notes, balanced by a subtle brioche and mineral finish. His vineyards are alive with over 90 species of plants and animals—some edible, perfect for a quick snack! Using spontaneous fermentations, minimal sulfur, and low dosages, Vincent crafts natural Champagnes that balance bright acidity with rich, textured depth.

With some cuvées as rare as 300 bottles, every sip tells the story of his land, his passion, and his dedication to authentic, terroir-driven winemaking.
