Since the inception of planting in 1999, Ramón's vineyard has thrived without the necessity of chemical interventions. This success extends to the cellar, where his philosophy revolves around minimal interference. Ramón's profound respect for his terruño, or terroir, underscores his belief that the land itself imparts the essence of his wines. Consequently, his winemaking approach is marked by simplicity and authenticity. Utilizing native yeast fermentations, he refrains from employing filtering or fining agents, preserving the integrity of the wine. Notably, Ramón abstains from the use of any additives, including sulfur, allowing the true character of the grapes and terroir to shine through in each bottle.
