A naturally sparkling ancestral method white from calcareous soils in the Costers d’Ordal. Organically farmed vines are hand harvested and gently pressed whole cluster, with fermentation beginning in old oak and stainless steel before finishing in bottle to create bubbles. Disgorged after extended time on lees and made without added sulfur, the wine is light, energetic, and mineral, combining orchard fruit with fine texture and bright acidity.

About Anima Mundi

Anima Mundi is the personal project of Agustí Torelló Roca, founded in 2015 to express the true character of the Alt Penedès. Working from estate vineyards near Sant Sebastià dels Gorgs, Agustí farms biodynamically on highly calcareous soils shaped by the nearby Garraf Massif.

Inspired by Plato’s idea of the “soul of the world,” Anima Mundi focuses on single parcels, native varieties, and absolute transparency. All wines are made without additives or sulfur, fermented with native yeasts, and bottled unfined and unfiltered. Clay amphora, concrete, and neutral oak are used to let the vineyards speak.
