About Ad Vinum

In 2016, after serving as the head sommelier at Le Chateaubriand in Paris for seven years, Sébastien Chatillon moved to Vallabrix in the Gard to start Ad Vinum. Originally from Normandy, Sébastien briefly attended university but found it unfulfilling. Searching for his true calling, he tried various jobs, including selling candy, working in stables, and leading rock bands. His journey for fulfillment led him to Paris for a girl, where René introduced him to Iñaki Aizpitarte, the chef at Le Chateaubriand. At just 25, Sébastien became the sommelier of a restaurant that ranked no. 11 on the World’s 50 Best Restaurants list in 2010. This experience deepened his passion for natural wine, and there was no turning back.

The Rhône Valley, located in southeastern France, is renowned for its natural winemaking practices and exceptional wines. Split into two distinct regions, the Northern and Southern Rhône, the area benefits from a variety of terroirs and microclimates. Natural winemakers in the Rhône Valley prioritize organic and biodynamic farming methods, eschewing chemical additives and pesticides in favor of sustainable viticulture. They cultivate classic grape varieties such as Syrah, Grenache, Mourvèdre, and Viognier with minimal intervention to produce wines that reflect the region's unique terroir and the purity of the fruit. In the Northern Rhône, wines are known for their elegance and complexity, with Syrah offering spicy aromatics and dark fruit flavors.
