A Word From Our Founder

Hi friends,
May in the 12-Bottle Club brings a full-spectrum lineup with color, texture, and plenty of movement. This month’s selection stretches across reds, rosé, orange, white, and bubbles, creating a case that feels generous, varied, and ready for all kinds of seasonal moments.
The wines offer a wide range of expressions without losing balance. There are reds with freshness, fruit, and structure, lighter bottles with lift and ease, textured whites and orange wines with more depth, and sparkling selections that bring brightness and energy. Together, they create a club month that feels layered, flexible, and full of discovery.
This is a case built for the rhythm of the season. Some bottles are perfect slightly chilled and opened early in the evening, while others can settle comfortably into dinner or unfold slowly over a longer night. With so many styles in the mix, there is something here for casual pours, shared meals, and bottles that invite a little more attention.
As always, the focus is on wines made with care, from producers who value thoughtful farming, honest expression, and a lighter touch in the cellar. The result is a collection that feels alive, expressive, and connected to the people and places behind the wines.

Club Pick 1

A structured Cabernet Sauvignon from Coquelicot’s organically farmed estate vineyard in Los Olivos. Grown on sandy loam soils, the fruit is destemmed, fermented on skins, and aged in neutral French oak after full malolactic fermentation. Bottled unfined and filtered, it shows dark fruit, earthy depth, and firm but polished tannins.

A biodynamic Alentejo red with bright fruit, earthy depth, and a clean mineral line. Grown on granite and schist soils, it brings together freshness and structure without feeling heavy. Stainless steel fermentation keeps the fruit clear, while 18 months in used French oak adds quiet texture and spice. A balanced, expressive red with red berry lift, gentle tannins, and a savory finish.

A light bodied, carbonic Gamay that marries natural winemaking with precision. Libre Pensée—“free thought”—reflects the spontaneous, thoughtful philosophy behind this cuvée, as seen through notes of silky, vibrant red fruits, crushed violets, and a hint of pink peppercorn

Fried chicken with a gochujang glaze, falafel with yogurt, and mushroom tacos with citrus and crema

Cranberry, strawberry, crushed violets, savory herbs and pink peppercorn. Overall light, in terms of body, tannins, and alcohol, with a lifted acidity and clean, zippy finish

Region: Beaujolais, France

Clotaire Michal has wine in his veins. From his early days swirling glasses as a sommelier in top spots across France and the UK, to a five-year deep-dive under legendary winemakers like Christophe Peyrus and the iconic Thierry Allemand in the Rhône, Clotaire didn’t just learn winemaking — he lived it. In 2013, he and his wife Yuka (who officially joined the Domaine in 2018) took a leap of faith and built something rare: a soulful, old-vine haven in Saint-Étienne-la-Varenne, where pink granite and 100-year-old Gamay vines tell a story you can taste in every glass. No chemicals, no shortcuts, no trendy “glouglou” vibes here.

Club Pick 4

A fresh organic red from Languedoc, made with Grenache and Carignan grown on limestone-based soils near Nizas. The grapes are harvested by variety and parcel, destemmed, then macerated as whole berries in stainless steel, concrete, and large neutral barrels. After a short fermentation and brief aging, the wine is blended and lightly filtered before bottling. Bright, easygoing, and fruit-driven, with red fruit, soft tannins, and a clean earthy finish.

Region: Languedoc, France

With 15 hectares of organically farmed vineyards (yes, that’s right — zero shortcuts, just sunshine, soil, and a lot of care), they bottle up the purest expression of the Languedoc spirit. This isn’t just a family-run estate — it’s a full-blown labor of love, turning out around 250,000 bottles a year, split between their Domaine line (the heart and soul) and their négociant wines (their creative, free-spirited side hustle).

What you’ll taste? Sunshine. Effort. Joy. Maybe even a little rebellion. These wines are for people who like their stories real, their land respected, and their glasses never empty.

Club Pick 5

A light natural red in the blouge style, made to sit somewhere between red and white wine. Fresh, juicy, and lower in alcohol, it leans bright and easy-drinking rather than dense or structured. Expect a chillable profile with red fruit, gentle texture, and a soft, lively finish.

Region: Bordeaux, France

Les Terres Dubien is a small, yet exceptional estate in the Médocaine peninsula, north of Bordeaux, founded in 2020. With just 3 hectares of vineyards, Benoit, the winemaker, embraces organic and biodynamic practices to highlight the unique terroir of each plot. His wines are crafted with native yeasts, gentle extractions, and minimal intervention, aging in vats and old barrels for 8 to 18 months. The harvest is manual, often with the help of friends, adding a personal touch to every bottle. Les Terres Dubien is a true expression of the land, with collaborative projects that further enrich its offerings.

Club Pick 6

A traditional Bairrada red made from old Baga vines more than 40 years old. The vineyards are farmed with a focus on sustainability and harvested by hand at optimal ripeness. Fermentation takes place in stainless steel, followed by aging in used French oak barrels for over a year. Structured yet fresh, this wine shows the savory depth and lively acidity that make Baga one of Portugal’s most distinctive grapes.

Club Pick 7

A juicy, dry rosé with more body and color than a typical light summer pour. Fresh citrus and red fruit meet melon, apple, and a touch of floral lift, with enough acidity to keep it lively. Cloudy, textured, and easygoing, it sits somewhere between a fuller rosé and a very light red.

Region: Cairanne, France

Clos des Mourres is run by Ingrid and Jean-Philippe Bouchet in Cairanne, France. They cultivate 5 hectares on the northwestern slopes of the Col du Débat, benefiting from natural drainage and Mistral winds, with clay-limestone soils at 200–280 meters altitude. Since 2012, they also work 10 hectares in Vaison la Romaine on sandy soils, producing wines with a distinct structure. All bottling follows the lunar calendar, reflecting their natural, attentive approach to viticulture.

Club Pick 8

A zesty orange wine made from Marina, Muscat, and Xarel·lo, with each variety vinified separately in stainless steel. Marina and Muscat spend 30 days on skins before pressing, then the wine ages for 6 months in stainless steel. Unfiltered and made with no added sulfur, it’s vibrant and aromatic, with stone fruit, pear, jasmine, spice, and a lightly grippy finish.

Raïmones represents the vibrant culmination of three esteemed wine families' legacies in Catalunia, heralding a new era of winemaking with a focus on natural practices and the revitalization of forgotten varietals. Embodying a commitment to craftsmanship and sustainability, Raïmones emerges as a beacon of innovation within the region's wine landscape. At the heart of their mission lies the preservation and promotion of "the Marina," an ancient and enigmatic grape variety whose potential has long been overshadowed by more mainstream cultivars. With a blend of reverence for tradition and a bold vision for the future, Raïmones harnesses the collective expertise and passion of its founders to breathe new life into Catalonia's winemaking heritage.

A bright, natural Chardonnay with a lightly cloudy look, gentle spritz, and a savory edge. Citrus and orchard fruit lead the profile, supported by sharp acidity, mineral notes, and a touch of funk that softens with air. Crisp, textured, and refreshing, this is a Chardonnay built for a good chill and casual food.
