As said by the winemaker, Alejandro Muchada, "Univers is the entrance to our 'Universe,' fresh, saline and elegant; pure Palomino grape." and we agree! This wine was produced in a vin claire style, whole cluster, direct press in a Champagne Press. Ages on the lees for 9 months in ceramic. Very unique wine!

Tasting Notes: Oregano notes with pear, quince, and honeysuckle.

Pairing Suggestions: Cured Meat, Aged Cheese, Green Olives

Andalucía, Spain

Type: White | Vintage: 2017 | Sulfur: Minimal | Varietal: Palomino Fino | Alcohol: 12.5% | Production: Biodynamic | Style: Nerdy

Both David Léclapart and Alejandro Muchada consider themselves vignerons and fully trust in the respectful work of the vineyard. Since 2011, when they first met, they share this concern for biodynamics, for the promotion of living soils and for the transcendence of agriculture and wine. Its key lies in looking for the best raw material (with the selection of its plots of land of albariza and old palomino), finding its most delicate expression (with its biodynamic viticulture) and preserving that value (with a minimal intervention vinification). - Muchada Leclapart
