From Sicily, Italy. The name COS comes from an acronym of the original winemakers Giambattista Cilia, Giusto Occhipinti, and Cirino Strano. The grapes are farmed biodynamically and organically. The vineyards are dry-farmed and only indigenous yeast is used.

COS Winery stands as a beacon of Sicilian viticulture's revival, catalyzing the island's emergence onto the global wine stage. Founded in 1980 by Giambattista Cilia, Cirino Strano, and Giusto Occhipinti, COS embarked on a journey that revitalized Sicily's winemaking tradition amid an era dominated by bulk production. Originating from an impromptu experiment with grapes from Occhipinti's father, COS evolved into a pioneering force in the Cerasuolo di Vittoria region, ultimately elevating it to Sicily's sole DOCG designation in 2005. The winery's ethos of experimentation birthed a signature style—natural, unadulterated wines that epitomize terroir expression. Embracing organic and biodynamic farming, COS nurtures its estate grapes with meticulous care.
