Martín and Patricia pour their passion into their three vineyards sprawled across 2.5 hectares, enveloping both their home and the bodega at Adega Vimbio. Here, Albariño, Caiño Blanca, and Loureiro vines thrive, trained on stone plinths. The earth is swathed in vibrant green cover crops, while blackberries and wildflowers adorn the vineyard edges. Embracing a holistic farming ethos, they integrate indigenous plants into their practices, utilizing biodynamic treatments sourced from local flora and algae from the nearby Atlantic as fertilizer.
