In 1988, he and his wife made a pivotal decision, purchasing vineyards in Saint-Aubin, a hidden gem amidst prestigious Burgundy appellations. There, they embraced biodynamic practices, utilizing organic elements like manure and silica to nurture the vines. Their dedication culminated in biodynamic certification in 1989, marking them among the region's earliest adopters.
