Dominique Derain stands as a trailblazer of biodynamic viticulture in Burgundy. Even prior to formal winemaking studies in Beaune, he showcased his expertise by crafting wine barrels. In 1988, he and his wife made a pivotal decision, purchasing vineyards in Saint-Aubin, a hidden gem amidst prestigious Burgundy appellations. There, they embraced biodynamic practices, utilizing organic elements like manure and silica to nurture the vines. Their dedication culminated in biodynamic certification in 1989, marking them among the region's earliest adopters.
What distinguishes Dominique is his quest for finesse and minimal intervention. He opts to age his wines in stainless steel, concrete, or fiberglass tanks, followed by a final rest in older oak barrels. This gentle approach allows the distinc
