Located in the Natural Park of Sierra Nevada, Manuel and Sara recovered an old orchard preserving ancient varieties while planting around 500 more trees with wild foraged varieties, mostly prunus malus. The farming is done organically and harvest is done by horse as the slopes and terrain make it impossible to access with any other type of vehicle. The cider is made without additives of any kind and is 100% natural. The fact that most of what they make is sparkling keeps the essence alive and intact. As the name implies, Ancestral 2017 is a pet-nat. Quimera 2009 is a base from 2009 re-fermented in bottle with must from 2017. Ya heard? - Selections de la Viña

Sidra del Sur, a unique cider from the southern region of Andalucía, challenges the traditional stronghold of Asturias and País Vasco by flourishing at an altitude of 2000m in the Granada province. Manuel Moreno and Sara Bertani are pioneers, exclusively using local and endemic apples cultivated in the high mountains of Sierra Nevada, preserving ancient varieties while introducing new ones. In the heart of the Natural Park of Sierra Nevada, their orchard boasts around 500 trees, organically farmed and harvested by horse due to the challenging terrain. The cider, produced without additives, maintains its natural essence, with most offerings sparkling to uphold its authenticity. Ancestral 2017 embodies a pet-nat style.
