Celler Pardas

The work in the cellar is as respectful to the wines as their work on the vineyards is to the land. Fermentations are spontaneous, the wines are never clarified nor corrected, and they use a mix of steel, concrete and oak for winemaking and élèvage. The resulting wines are expressive and very direct. Sumoll is not an easy grape to master—“the most masochistic grape there is”, says Jordi— but as the Sus Scrofa shows, Parera and Arnan have conquered its rusticity and are making a delicate, fresh, and immediate wine. The same goes for their Xarel-lo and Malvasía, which are floral and aromatic and yet retain great salinity and minerality, no doubt owing to the chalky and rocky nature of their vineyards. - Bowler Wine

About the Winemaker

Celler Pardas

Celler Pardas emerged from the vision of two Penedès growers, Ramon Parera and Jordi Arnan, who acquired the historic Can Comas estate in Alt Penedès, near Sant Sadurni d’Anoia. Nestled around an ancient medieval farm, the property spans 30 hectares of forest, diverse crops (primarily cereals), and indigenous grape varieties—Sumoll and Xarel-lo—carefully planted by Ramon and Jordi. Additionally, they source fruit from two ancient northern plots boasting old vines of Sumoll, Xarel-lo, and the locally renowned Malvasía de Sitges—a remarkably acidic grape, dubbed the “Riesling of the Mediterranean” by Ramon due to its challenging vinification process.

In the sun-kissed region of Penedès, nestled in Catalonia, Spain, a growing community of winemakers is embracing the principles of natural winemaking with passion and dedication. Here, amidst the rolling hills and Mediterranean breezes, vintners like Maria Solé and Jordi Torres are leading the charge, cultivating vineyards with organic and biodynamic practices to produce grapes of exceptional quality and character. In the cellar, they practice minimal intervention, allowing the grapes to ferment with native yeasts and refraining from additives, fining, or filtration. The result is a portfolio of vibrant and expressive wines that capture the true essence of Penedès—wines that reflect the region's terroir, history, and spirit with every sip, offering a taste of Catalonia's natural wine revolution.
