Théo Dancer is taking it back to his familial roots with this PG made of purchased fruit from Alsace. Though the Dancers are known for their ethereal bottles of white Burgundy, Vincent was raised in Alsace. If things had gone differently, perhaps we would be drinking more Pinot Gris and Gewürzt from this clan. Though I am sure everyone is grateful for how things played out. The style of this PG is light and acid-driven rather than broad and fruity and is the perfect precursor to dinner. Maybe turn up the Alsatian volume to 10 with sausages and choucroûte garnie?
