Revel Cider

We met Tariq from Revel in Barcelona and fell in love with both the ciders and the wines they are making in Ontario. Currently they age their ciders and wines on tannic apple pomace and grape marc, protecting them from oxygen while infusing texture and salinity. Letting the microorganisms breathe in their youth, and continually digest plant material as they age, gives them a vibrant expression of both fruit and animal life!

We encountered Tariq from Revel during Vella Terra in Barcelona and were immediately captivated by their ciders and wines crafted in Ontario. Their production is remarkably small-scale, making our acquisition all the more fortunate, and we eagerly anticipate future releases. Here's how Tariq describes the project: Revel was born from my deep-seated passion while living on Manorun, an organic vegetable farm. Immersed in food and drink fermentation, I experimented in our outdoor kitchen, crafting naturally fermented pickles, mulberry wine, and eventually cider as autumn descended. With boundless enthusiasm and naiveté, our cidery's journey began. Over time, we developed a profound appreciation for our distinctive native yeast fermentations.
