Dolores Cabrera Fernández, inspired by the mythic Elysium, finds her own paradise among centenarian vines in the Canary Islands. Trained in viticulture, she ventured into winemaking, founding "La Araucaria." Dolores' passion lies in her vineyards, where earthy volcanic soil and humidity yield exceptional wines. Braided cord-trained vines on the slopes of Tenerife bear witness to her devotion. Dolores exclusively ferments unique Listán Negro grapes, distinctive to the region. Her organic farming crusade extends to fellow farmers. Each bottle reflects her paradise - a flavorful journey awaiting discovery.

Dolores Cabrera

For years, Dolores Cabrera has been tending to her vineyards in the Valle de la Orotava, Tenerife, embracing organic farming practices long before they became mainstream. While some of her plots have earned official organic certification, all have been cultivated with the same conscientious approach. Transitioning from selling her grapes to larger producers, Dolores embarked on her winemaking journey in 2013, birthing La Araucaria. This venture represents her unique and natural interpretation of the Listan Negro grape, the cornerstone varietal of her region.

Canary Islands, Spain

In the remote and rugged landscapes of the Canary Islands, natural winemaking is both an art and a way of life. These volcanic islands off the coast of northwestern Africa boast a viticultural heritage as ancient as it is unique. Here, amid the volcanic soils and Atlantic breezes, winemakers practice organic and biodynamic farming methods with a deep respect for the land. Indigenous grape varieties such as Listán Negro, Listán Blanco, and Malvasía thrive in this harsh yet fertile terrain, producing grapes of exceptional quality and character. In the cellar, minimal intervention is the guiding principle, as winemakers allow spontaneous fermentations and aging in neutral vessels to reveal the true essence of the grapes and their terroir.
