Fermented until dry on the skins (24 days) before being pressed off into neutral French oak to rest through the winter. Serve chilled or at cellar temp with root vegetable dishes and alpine cheeses. About Maloof

Meet Ross Maloof and Bee Selman, a dynamic duo embodying the perfect balance of yin and yang. Ross, a materials engineer steeped in hard science, and Bee, a restaurant professional with a finely tuned sensory approach, converge as two passionate nerds driven by their love for hospitality and impeccably fermented pizza dough. Ross Maloof's foray into winemaking began unexpectedly during a visit to Oregon, where he found himself interning in the Willamette Valley during harvest. Prior to this, he honed his craft in the Philadelphia dining scene for over a decade, notably serving as the beverage director and general manager for Vedge Restaurant group. Gradually becoming bi-coastal, Ross dedicated more time to winemaking, culminating in his inaugural vintage in 2015.
