Domaine Mamaruta | Fitou, France

Vintage: 2017
Appellation:
AOP Fitou
Sulfites:
10 mg/L
Spontaneous Fermentation

70% Carignan and 30% Grenache from 70 year old vines. Whole bunch press with 15 days maceration.

Light drinking with bright acidity and vigor, this is our favorite food wine of our Domaine Mamaruta portfolio of red wine. We personally like to pair it with late-night on the town food (think pizza, kebab, etc.) but it would do just as well with something like a risotto or a rich poultry dish.

Carignan has been classified as a low-quality, bulk wine in the past, but producers like Marc Castan have been creating wines made out of Carignan that change even the harshest critic's mind. When done properly, Carignan has a medium-light body, intensely fruit-forward nose, and deliciously quaffable flavor profile of red fruit. The 30% Grenache adds a slight herbaciousness, while rounding out the wine to create a seriously good natural red blend!

Pairing Suggestions: Pizza, Risotto, Kebab

All the vines are farmed organically and the cellar is worked with minimum input, and with a great respect for life and nature. In the vineyards, he uses biodynamic practices without certification. The management includes careful pruning and tending of the wounds, homemade compost and soft ploughing.

In the winery, vinification happens naturally. Nothing is used to tamper with the juice during fermentation. In the spirit of our work in the vineyard, he doesn't use cultured yeast, de-acidify or fine his wines.
